Hello Everyone,

I am so happy to start the Guest blogging with a wonderful person SE. For me she is my first replier ever and that is very close to me as a friend.

She is an amazing cook and has her food blog www.denufood.com. She is from Belgaum, stayed in Pune for some years and now residing in the USA. The food blog hosts number of Marathi, Goan recipes and many other varieties. I was very happy when she agreed to be the first guest to write, means so much to me. She sent me two recipes out of which I chose the spicier one.

Thanks Deepa for having me do a guest post on Foodlyrics, very happy to write my first guest post at a blog!! Just like everyone remembers and cherishes  the first moments  in their lives, blogging is no different either. I am assuming every blogger remembers and cherishes those firsts during blogging, like the first post, first follower, first comment and so on, not that others are less, but you cherish those initial moments! “Why am I writing all this”, it is because FOODLYRICS was the first blog that I visited after I had started mine. I had made some sheera with banana (suji halwa) and just out of curiosity, wanted to find out if there were any posts in the blogosphere and luckily stumbled upon this sweet post from where the friendships started !!!

So coming back to the guest post, I had this recipe in my draft and was deliberating if I should send the Recheado/Rechaido masala as a guest post since it was a Goan-Portuguese masala preparation used for fish fry. And I didn’t want to corrupt the blog with a non-veg recipe. So I used the masala to prepare skillet/sautéed potatoes instead!! So here is the recipe for one of the Goan specialties!!

Recheado Masala and Potato Recheado !!


Ingredients:

List 1)

10 – 15 red chilies
3 – 4 green cardamoms
4 – 5 cloves
2 in cinnamon
1 tsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp pepper corns
2 tsp vinegar or more
salt

List 2)

1/2 cup onions, minced
5 –6  big garlic cloves, minced
1 in ginger, minced
1 tbsp oil

Preparation Method:

1. Grind all the ingredients mentioned in the list 1) to a fine paste or (powder, then add vinegar and mix)
2. In another pan, heat oil and saute the ingredients mentioned in list 2), till lightly brown. Add the spice mix and roast a little till the raw smell of the spices disappears and paste is dark brown.
3. Cool and then grind once again to make a fine.
4. Use it as a filling for fish fry or a spice mix for vegetables !!!

Preparation Time: 10 mins

Note: One can also soak the red chillies in vinegar for few hours before grinding into paste !

Potato Racheado


2 cups potatoes, cubed
1 tbsp oil
1 tbsp racheado paste
salt to taste

Method: Heat oil in a skillet, add the potatoes and the racheado masala paste. Sprinkle little water and give a occasional stir so that the potatoes are coated with masala. Cook till all the water evaporates and the potato sides a light brown. Remove and garnish with coriander leaves/cilantro. Serve it as a side !!

Preparation Time: 10 mins

Serves: 2

  • Rachaedo paste is one of my favorites. Goan food has its own aroma of Vinegar, Garlic, Coconut and loads of spices thrown in. Thanks Deepa for introducing us to Denufood. Nice informative post on Goan cuisine.
