First of all I would like to thank deepa for giving me opportunity for writing a guest post in her blog…I had liked her concept of guest post a lot.Since this is my first guest post in blogging I wanted to post something sweet so I am posting this sweet potato kheer recipe. It’s a traditional Goan kheer recipe. In this sweet potato is cooked along with coconut milk and jaggery and ginger is also added which gives it a very nice flavour and taste. Its a very simple and easy recipe with few ingredients.

Sweet Potato Kheer(Ratale Kheer)

INGREDIENTS:

3-4    medium sized sweet potatoes
3 cups fresh coconut milk
2 table spoon finely chopped ginger
1-2 cups grated jaggery
2 table spoons wheat flour
1 tea spoon cardamom powder
pinch of salt

METHOD:

Peel the sweet potatoes and slice them in 2-3 mm thick slices and keep them in water for 5 mins.Chopped sweet potatoes must be approx 2 cups. Then wash the chopped sweet potato  pieces 2-3 times in water and drain it.Heat 2 cups water in a vessel and when it starts boiling add the sweet potato pieces and ginger and let them get cooked for some time.It will take 8-10 mins approx.

When the sweet potato is cooked and soft add little salt.Take the coconut milk in a bowl and add jaggery to it.Mix the jaggery well in it.Now add wheat flour to the jaggery-coconut milk mixture and stir it well.If lumps are formed remove them and mix it well.Wheat flour is added to thicken the kheer.

Now add this coconut milk mixture to the cooked sweet potato mixture and stir it well.Cook on medium flame. Now the kheer will start getting thicker.Keep on stirring till it gets thick. If kheer becomes very thick you can add little water to adjust the consistency.

When the kheer starts boiling sprinkle cardamom powder and remove from flame..Serve hot.

NOTE: I purposely did not add any dry fruits in this kheer as it does not go well with it.
