This is my first guest post ever since i started blogging around a year back. I would like to thank Deepa for giving me this wonderful opportunity!! Thanks love I am sure everyone who have known me and followed my blog know that I am crazy about baking. I live baking, drink baking and sleep baking!! But what many of you dont know is that I dont eat the goodies that I bake, its not like the things i have baked are aweful in taste, infact whenever I have shared my bakes with my colleagues and friends; I have always received fantastic responses. Many of my blogger buddies too have tried out my recipes and it gives me immense pleasure and satisfaction when they email me about how they loved my recipe!! Strangely enough I am not fond of sweets though I adore chocolates and ice creams, but not cakes or cookies though I bake them every week! Weird isnt it?
Being working women, it is very difficult to balance one’s professional and personal life. After a long tiring day I hardly have energy to cook dinner but if someone requests me to bake, I would say YES without even thinking for a second. Baking for me is very therapeutic, it helps me to de-stress and rejuvenate. I have baked at 1′o clock in the night and even 5 clock in the morning…..yeah thats me passionate about baking!!! When Deepa requested me to write a guest post I immediately knew I would be baking! So when a dear friend requested me to bakes some chocolate muffins for her office party I knew my prayers were answered. So today I represent to you Mini Eggless Chocolate Muffins, eggless baking has always been a challenge for me and I am always on lookout for new eggless recipes and egg substitutes. I have tried baking with banana puree, curd and oil in the past and have got fantastic results! I have just used my Hot chocolate muffins recipe and twisted a bit.
Without any further delay, lets go directly to the recipe. I have made plain chocolate muffins, but you can add some roasted nuts to enhance the flavors!
Mini Eggless Chocolate Muffins – yields 12 muffins
1 1/2 cups all purpose flour
3/4 cup light brown sugar
2 tbsp cocoa powder
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp instant coffee
a pinch of salt
1/3 cup oil
1/2 cup milk
2 tsp vanilla extract
- Grease and flour 12 muffin cups or pan.
- Preheat the oven to 180 C degrees.
- In a bowl mix together flour, baking powder, baking soda, cocoa powder, coffee and salt. Mix lightly.
- Beat sugar and oil together for 2 mins. Add in vanilla extract and mix well.
- Add in flour mixture along with milk and mix well. If required throw in some roasted walnuts, make sure to roll the nuts in flour before adding into the batter, this will avoid them to sink to the bottom.
- Fill the muffin cups 3/4 full. Bake them for 15 to 18 mins until a tooth pick inserted comes out clean.
- Enjoy them warm with a glass of milk or some vanilla ice cream.
My friends colleagues loved these and I even got a thank you letter from them! The recipe is full proof and very diverse in nature, you could also throw in some chocolate chips, dry fruits or any nuts, it would work well.
